Homemade Chicken Soup
Oh blog readers recipes and I are in a funk. Everytime we go to make a recipe it always end up being cooking murphy's law. Sad but true. Fear not though the original recipe for tonight will be saved for another day when the sun is shining. Stupid rain ruined my grilling venture.
Anywho it was onto another pick.I was a shuffling my feet at this one. It was at the last hour when I needed to pull a rabbit out of my hat or a recipe as it may. Nothing was ringing with me. I always go for something out of the box but I wasn't finding anything that caught my eye...until I realized we've never done a chicken noodle soup before. So it was comfort food for the win.
Who doesn't love chicken noodle soup? Whenever you're a fan of the Campbell's variety or homemade this stuff is killer. Now most people only eat this when they are feeling less than 100% but I say give this soup the year round treatment. Besides if you were a soup would you want to be known as the go to food for when you're sick? I'd think not. Indeed.
I think I found a good one so let's get this rolling. Here's what you'll need:
Homemade Chicken Soup
Ingredients:
*1 (3 pound) whole chicken
*4 carrots, halved
*4 stalks celery, halved
*1 large onion, halved
*water to cover
*salt and pepper to taste
*1 teaspoon chicken bouillon granules (optional)
Directions:
*Put the chicken, carrots, celery and onion in a large soup pot and cover with cold water. Heat and simmer, uncovered, until the chicken meat falls off of the bones (skim off foam every so often).
*Take everything out of the pot. Strain the broth. Pick the meat off of the bones and chop the carrots, celery and onion. Season the broth with salt, pepper and chicken bouillon to taste, if desired. Return the chicken, carrots, celery and onion to the pot, stir together, and serve.
NOTE: Add the noodles (whatever kind you like) to make this a chicken noodle soup!
AND...we have Heart Smart recipe: Cheddar Beer Biscuits to go with it!
(CLICK ON THE NAME TO GET TO THE RECIPE!)
The Soup
WW Points: *4 points per serving
The Biscuits:
WW Points: *3 points each biscuit
The soup was good. Would I make it again? Probably not. I just like Ma's chicken soup a lot better.
Tid Bits:
*As mentioned above to turn this into chicken noodle soup just add your fave noodles.
Ma's Spot:
The Soup: If you're looking for a quick and easy dinner this is it. For me when I have soup it should be warm, comforting, and homely. When I make my chicken noodle soup it's an all day process so for me I prefer the long slow cooking process. There is no quick fix for the taste of home. So if you're in a hurry and lets face it that's the way we all are these days then this soup is for you.
The Biscuits: I had this recipe in my coupon book for over a year and kept saying I'm gonna make this. So tonight we did and they were great! They're so easy to make it literally took 15 minutes (besides baking time). To me opening a can of Pillsbury isn't needed anymore I'll just make these from now on. Don't let the fact that it has beer in it freak you out. The foam in the beer helped them rise and become fluffy. There is no strong beer taste in it. Coming from me (who isn't a big fan of cheese) the cheese in these biscuits really set them off. The onion butter on top really did just that and topped these off. Usually I say that I encourage you to make these but tonight I beg you please make these biscuits. They are delicious!
*SNACK CORNER:* It's time for snack corner! Where we take new snacks in the grocery store and break it down for you. We tell you which are hot and which are not. Let's get to this week's pick:
For all three types WW Points: *4 points for 16 chips
Dinah: So tonight we have the 3 new Pringles. Cheez Ummms Mild Jalapeno Cheddar, Cheddar and Sour Cream, and 4 Cheese. I tried each and out of the three I liked the Mild Jalapeno Cheddar best. Actually unless you're a huge Pringles fan (which I only like one flavor) these new flavors are kind of a bust. Although it may be due to me having to wash my mouth out every hour from my new piercing. Eh, who can tell? Try them out, you just may like them.
Ma: I love Pringles and even though I'm not a big fan of cheese I tried these anyways (except for the mild jalapeno cheddar). Let's just say I won't be purchasing these again. The only one I cared for a bit was the 4 cheese. I can only do a little bit of those. So when it comes down to them I'm just not a fan.
Alrighty guys that's it for this week. We'll see you back here next Tuesday. Have a great week guys!
