Hey guys!
So there has been a bit of hiatus with the blog. I apologize a great deal for that. Things around here were a mess. First your blog mistress went on a vaca to Tennessee with my hubby and fam, then Ma and her sister Jane moved, and my hubby braved surgery for the first time to have his appendix removed. This was all in the span of 3 weeks. What a mess!
So now that the craziness is (hopefully) over we can get back to business as usual around here. Missed us? Well we've missed you guys so on with what we do here at Tuesday's with Dinah & Ma and that's bringing you our recipes! Tonight's comeback dish is something ma picked. She discovered it on the side of a box of stuffing. I'm leery of recipes on sides of boxes. What if they don't turn out or they are too difficult? I have hope with this one though.
Here's what you'll need:
Bruschetta Chicken Bake
Ingredients:
*1 can (14-1/2 oz.) diced tomatoes, undrained
*1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
*1/2 cup water
*2 cloves garlic, minced
*1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
*1 tsp. dried basil leaves
*1 cup KRAFT 2% Milk Shredded Mozzarella Cheese
Make It:
HEAT oven to 400ºF.
step 1
MIX tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened.
step 2
PLACE chicken in 3-qt. casserole sprayed with cooking spray; sprinkle with basil and cheese.
step 3
TOP with stuffing. Bake 30 min. or until chicken is done.
This was pretty good. Not the biggest fan of the mushy stuffing.
Tid Bits:
*For a different kick try out the canned italian style tomatoes.
*We decided to sauted our chicken instead of putting it in the stuffing mix raw.
Ma's Spot: When I saw this recipe on the back of the box of Stove Stop Stuffing I knew this was a recipe I wanted to try. I'm glad I did. I love that you can put it in your fridge and eat it for leftovers for next day. Yum for leftovers! I loved the fact you don't put butter in it. It makes it alot healthier for you. I love the tomatoes in it as well. When I saw that you put in the raw chicken and put the stuffing on top of it I put a halt on it. When I was young my mom never stuffed her turkey with stuffing. She always had a thing about the stuffing touching the raw chicken that you'll eat later. That has stuck with me all my life. I loved sauting it with some nice fresh herbs and then adding it to the recipe. So whenever you stick stictly to the recipe or you tweak it like we did for me it's a winning dish.

Dinah: Tonight we bring you Mama Mary's Apple Cinnamon Gourmet Dessert Pizza. I've had my fair share of dessert pizza's. Usually they're overly sweet and coated in chocolate. Not a huge fan but with Mama Mary's I found myself actually liking it. The apple cinnamon flavor and the buttery crust make this a dessert pizza worth trying.
Ma: When I saw this at Walmart I thought Wow, cool. What a great concept. I loved it! I'm sure you can always make something like this on your own but for the price and convenience and only 5 minutes to bake it's a winner. So if you want something a little sweet after dinner or even a midnight snack this is the product for you. It's not heavy or too sweet. It's just right. Will I buy more? Oh yeah.
